The National Restaurant Association, the leading trade association for the U.S. restaurant industry, projects that 2006 sales will total $511 billion (an amount equaling 4 % of the U.S. gross domestic product). This industry employs 12.5 million workers, making it the country's largest private-sector employer. Employment opportunities will grow as it is estimated that this industry will add 1.9 million jobs by 2016. It is projected that the overall economic impact of this industry will exceed $1.3 trillion in 2006 as the restaurant industry generates significant sales and employment in related industries. Consumers are spending a greater proportion of their food dollars on meals away from home. While the U.S. restaurant industry's share of the food dollar was 25 % in 1955, this figure is now 47.5%. In 2004, the average U.S. household spent $2,434 on food away from home. This increase has been driven by rising incomes and growing consumer demand for convenience. The food service industry is divided into three general categories: commercial, institutional, and military. The commercial category, by far the largest, has two major segments: full-service and limited service restaurants, the latter also known as fast-food or carry-out restaurants. Among the key industry issues identified by the National Restaurant Association are the following: growing consumer demand for healthy and nutritious menu items, rising energy costs, and increasing consumer demand for even more convenient service options.
