UNESCO lists the following countries as part of Latin America and the Caribbean:

EIU Country Profiles Gives overviews from The Economist Intelligence Unit of the economic situation in 200 countries, including those in the LAC region. (Updated Annually)

The Food and Agricultural Association of the United Nations (FAO) hosts the World Food Summit to address issues of hunger and poverty around the world, including in Latin America and the Caribbean. They have several websites related to this initiative:
