This is actually a trick question; the answer is you CANT setup a vacation reply in UCS.
What you will need to do is to go to PSU work and use the Start/Stop Vacation Auto Reply.
Clicking on the link above will take you the Automatic E-mail Reply Message Utility where can you can Start or Stop this utility.
From here you can setup the Start/End Date and the Message Reply.
